How would I learn to do something like this?
I saw an xbox360 controller turned into a mobile 360 by cutting it up and rewiring it to a mini screen and I thought it was really cool. Also I saw one of my friends create a miniature freezer powered by a battery that he took with him in his backpack. I would like to learn how to do these type of things, what is this field called mechanical engineering? Any recommended online courses like a DVD I can order?

It’s not something you can learn overnight. There are plenty of hardware hackers out there who don’t have a degree… it just takes practice. Certainly studying in the fields of mechanical and electrical engineering would help, but not necessary. You’ll need to learn about computers and low-level languages like assembly if you want to work with embedded systems.
What you need to do is pick a project and try to do it. See what you can figure out. Then pick another, and another, etc.
